Kishi said that one will die , but Naruto and Sakura are excluded ,because they have a lot of plot shields . Maybe Kakashi? Sasuke has to achieve redemption ,but that doesn't mean that he will survive .

Usually, no, they don't die. Unless a sacrifice at the end or near end like in this phase of the manga that we are in, and from a main character that isn't in the top three main characters at least like Kakashi, but I don't think that will happen with Kakashi... For now.
Or in Sasuke's case, same kind character and main role in the manga like fighting at the end of the manga against the hero and possibly dying.

Are we talking all anime or just Naruto?

^ Pretty sure it's Naruto but I could be wrong.

I'm not sure if you mean just in Naruto or in general. For Naruto it's possible that Sasuke or Kakashi could die, though I highly doubt Naruto himself will die. If you mean in general, its perfectly possible for main characters to die, both main characters in Death Note end up dead, but that had a very different atmosphere than Naruto.

If its in general its a pretty bad question. Because answering that question with examples will result in major spoilers.

It takes a really, really "ballsy" author to kill a main-character and have it have meaning. There can be callous deaths like Neji's death or the constant death-revive scheme of Dragon Ball Z (where death is more of an inconvenience), or the death can be a powerful part of the plot like
If the author wants to take the chance and get out of the proverbial 'Writing Box', they can kill off the main-main-main character himself, the narrator of the story, and take the book mid-way to another direction. I plan on utilising this scheme for my own book-series at least once; it's really interesting to think about what happens after your protagonist dies not at the very-very end or in an epilogue, but during a major point in the plot where he's supposed to be there until the end as per dictation.

One interesting thought is what Alfred Hitchcock did with Psycho, when he made it appear that the main character was Marion Crane, when it actually turned out to be more about Norman Bates.
