Fully agree. She's the main antagonist whom he'll have to not only convince of his cooking but help her change. Seeing how she's jealous of Alice being able to cry w/out worrying about her professional image is another foreshadowing that something will cause Erina to finally cry and let her emotions all out in the future.
I'm not sure if this arc is going to focus on her that much though... I feel like it's there to develop the other members, but we'll see.
Anyways, how long do you think this manga will go on? 120 chapters, and only 6 months have passed. Imagine how many chapters we need to get to the third year...

Not sure but I feel like Soma will be part of Elite Ten before third year.

It's tricky because I don't want it to be like "Oh you're his son?! Now I love you!" I'm not saying it should be on hold forever, but I guess it depends on how the story is supposedly written. I guess what I'm saying is that Erina has two dilemma: normal life and her connection with Soma's father. I don't think both of them will be solved in one sitting. Both of them has their role for development. I don't know how is it going to happen but for the former, the pieces are getting placed slowly.

I definitely don't expect Erina to develop feelings for Soma because he's Juichirou's son. That would be pathetically superficial of her, and I'd stop shipping them, for real. She'll definitely be in disbelief and be like:" I can't believe that my idol is the father of someone like him!" I hope that the creators will not mess this foreshadowing from Erina's point of view up. Maybe she'll grow closer to him before she finds out about his connection to Juichirou? As for Soma, this line prob means that along the way he'll realize that she's the one person he'll want to impress his cooking with, regardless of shipping. Glad that you like her XD What chapter are you on? There's this chapter 52.005 or so that is a sidestory about Erina; you'll get to understand her better after you've read that chapter. She lacks the common knowledge ordinary girls have and always has to uphold her professional image all the time... I felt pity for her tbh. I kind of wanna say that she is one of my favorite female characters next to Megumi and Ikumi (the meat girl ), but at the same time I don't want to b/c her development has been so stagnant over the course of the story. She's a difficult person, and I'd be lying if I said that she doesn't piss me of from time to time XD

Those extra chapters can be anything from short recipes to the student's daily lives and some flashbacks from the students who used to go to Tootsuki Academy.

Well the icing probably be Juichirou's backstory on how he met his wife. Parallel power. Bakuman happened, Naruto happened (to backstab), so we don't know how this works. As strange as it is, but it sounds like SN, only they can go all the way, since there's no gay love involved due to WSJ policy as one has said. I don't even know that's true.
