Hinata's high stats and awesome skills are only in databooks/ fansites    Numbers and statistics that were rarely made use of in the actual story of this manga.

The stats aren't baseless. Regarding Hinata...

You can see how Naruto was forced onto the defencive at one point in his battle with Pain when he no longer had access to SM. True, his interest in that scuffle was to stall God Realm for as long as he could, but he didn't seem to be gaining any kind of advantage or preventing the enemy from pushing him back.
 
On the other hand, Hinata appeared to be pressuring Pain in CQC with her flourishes before being taken out by Shinra Tensei. To me, at least, it's not surprising. The Hyuga specialise in a unique fighting style that's often considered to be the most powerful in Konoha. A practitioner of the Gentle Fist, even one who hasn't mastered the art, should be expected to have some level of talent in close quarters with their Byakugan.

The Databook does provide a separate page for the transformation that centres around the mechanics and enhancements of the form. Kishi went into specifics about Jiraiya's SM in the 3rd Databook, remember? 
 

3rd Databook reference to Sage Mode

Who knows? There were nowhere near as many chakra modes back when the 3rd Databook was released as there are now. It's possible that Kishi will go into greater depth about their statistical enhancements for the user.

I do remember Jirobo mentioning how level 2 of the Curse Seal increased his strength ten fold. And judging by Kakashi's conversation with Shikaku. Naruto's chakra cloak hand outs also have an enhancement rate of 3x.So there are instances where specific numbers are given for modes.

that's what i would really like for all characters, that way us readers won't have to take an estimate on their enhanced strength.

For all of the newfangled Rikudou chakra modes that we've seen, an exact estimate might not be possible. The gap that exists is probably equivalent to the god ki of Bills and Whis being compared to earthly, mortal ki that the Z cast has in Dragonball.

Limitlessness of nature vs human limit

That's the gist of Juubi jinchuuriki or Rikudou chakra beings when pitted against regular humans with regular chakra natures and levels. The only "normal" character with the talent and sheer speed and strength to take on these demigods is Guy - even that was only attainable through a suicidal taijutsu move that grants power superior to the Hokage.

Remember the sleeping bomb and poison kunai? Those are unique skills which Tsunade has never used in the manga before.

Something as trivial shouldn't count as special skills, especially not for Sakura.

@redrose3443 Yeah, it's sad. We haven't seen a single slug sage in this entire series. I can only imagine how incredible Sakura would have been if she mastered that thing. But this is Kishi, so I have no hope.

 

 

Naruto's movie design is a bit of a dispointment, he still doesn't look like an adult, he looks like an highschooler.

And Sakura looks like she's 14.

Maybe, maybe not. Sakura learned how to create those tools from Tsunade and Shizune. Given how impressed Kakashi was by the bomb, her poison and anesthetic making skills must be above average.

Sakura is someone who lacks any kekkei genkai ...

so dunno


He once told Sakura stands for human weaknesses & currently everyone knows what that weakness is


so I guess Kishi will be more focused on that rather than any great skill
