People would still be NH because they don't understand the Tsundere concept and Sakura's character, generally. She is complicated, while Hinata is simple.
I think simple is the key word for NaruHina.
I've come up with a few ideas pertaining to
why people ship what they ship, and it all comes down to a person's own personality and their desires. This is what happens when you start getting into psychology.
Not to generalize, but typically female NaruSaku fans ship the pairing because they see themselves in Sakura, with a confident personality or what have you, and they personally want/have/desire a guy like Naruto. On the flip side, male NS shippers support it because they see themselves as Naruto, and they sympathize with his struggles to gain Sakura's affection, and they are attracted to girls like Sakura.
Now, on the NaruHina side, it's a slightly different case. The female NaruHina fans, same as NS shippers, see themselves as Hinata; shy, introverted, timid, etc. They want a guy like Naruto. Male NH shippers go back to the simple point; she's shy and has boobs. I don't know why (since it doesn't pertain to me), but for some reason, a lot of guys find that sort of combination attractive. The majority of NH fans
are male, so you can see exactly why that is.
A lot of people don't like Sakura because, as you said, she's not simple; she's complicated, irritable, feisty, and confident. It's a weird and really degrading psychological thing, but a lot of guys want to have power over the relationship; they don't want someone that will challenge them, or actually be able to argue with them. And the female fans dislike her because they themselves want to be that confident, sassy girl; or they find themselves relating to Sakura's imperfections, and the don't like that.
