If Hinata wasn't in the plot AT ALL, her character nonexistent, would the plot still be the same - untouched?

That's actually pretty arguable. Her intervention in the Pein fight affected the plot directly, so I'd have to say that the plot wouldn't be the exact same.

I guess the argument could be made than any of Naruto's friends could of filled that role in the Pein fight. Maybe it would of looked odd if it were say Ino or Shino, who have no real connection to Naruto. But you could easily place a Konohamaru, Sai, or Shikamaru in Hinata's role and produce the same result.

No one really blames you for feeling that way. I mean, that's pretty much the whole point of her: to try to be cute.

So, basically she's cool.

So, basically she's cool.

Yeah, she's fine in my book and a hard worker to boot. I think the anime makes her out to be more of a stalker than she actually is in part 2 manga.

I think the anime cranks up the qualities of many characters. For example, it seems like Hinata is shyer in the anime, Naruto seems stupider, and Sakura punches Naruto a lot more in the anime than in the manga.

Hinata perspective on Naruto has NOT changed much since the beginning of series, because unlike most of the characters, she already liked and looked up to Naruto. But she still acts the same around him, she is still shy and her crush hasn't really been developed well, mainly because it has almost entirely been one-sided. It only recently that she said she will finally stop chasing him, and try to hold his hand. While a lot of anti-Hinata fans hated that she said that, meaning she hasn't developed yet nor does it seem she would change, I actually think it's a good thing for her character. A lot of people say that she being the same and is actually being selfish thinking about getting with Naruto after the war. Though I don't know if the author intended for Hinata to come off selfish in that statement, the fact that she is thinking about herself for once is good. Yet again, unlike most Narusaku fans, I don't think Hinata is a selfish person, or at least that's not how the author wanted to portrayed the character. The fact she is thinking for herself, and she still wants to help a friend, shows me that she has started to change. STARTED to change.
But, unfortunately for her, I still don't give a damn about her character, and I still find it sad she still needs a MAN in her life to feel completed. So why did I spend the last paragraph defending her statement in chapter 573, well it's mostly because I see a lot of people around this website giving Hinata a lot of crap, especially her statement in 573. It reminds me too much of the ridicule that Sakura got after her confession to Naruto. I like to defend certain characters actions if they get a lot of slack for that said action, only when I don't think they deserve it. I don't think Sakura deserved the slack she got after the whole confession fiasco, because I don't think the character was being selfish nor do I think it was the authors intent to show her in such a negative light. I don't think Hinata deserves the slack she gets from Narusaku fans, because I don't think it was the author's intent to show Hinata as being selfish, nor that Hinata hasn't really developed after 573. I just think she was just POORLY developed.
I also admit there are times that Kishi has actually made me root for her, not in getting with Naruto, but when she's fighting. I remember I was rooting for her to win during her fight with Neji, and again when she's trying to save Naruto from Pain. Though, in the latter battle, I always thought her confession was weird, and, may I dare say it, not necessary. Maybe it was necessary for character to have confession, but the timing always seemed offed, possibly forced. Kind of how Sakura's confession to Naruto was, but that was INTENTIONALLY forced and poorly timed. An other thing why I didn't care for her confession, is because I don't care for her character in general. I'm often surprise to see she has large fan base, often showing up on Naruto's best characters list, despite what little we actually see her do anything. I find her to be such a weak character, that it is truly beyond my comprehension of how they're so many Hinata fans (let alone Naruhina fans).
I don't know if Kishi should be proud of himself for creating such a popular character, despite what little treatment he has given her. Or that he should be frustrated that a good portion of his fans prefer to see the actions of a supporting character, rather than the actions and goals that come from the main characters. I'm sure he likes Hinata, I believe he likes most of his characters, I just don't know what kind of tolerance he has for her fan base.

I agree with pretty much all of what you said, but I definitely agree with you here. She was simply thinking about what she wanted after the war was over. Whether her comment was romantic or not, I felt that 573 was a moment of growth for Hinata. If she meant that she wanted to be considered an equal to Naruto, then that shows she was going to stop following his shadow and start depending on herself more for inspiration. (Hope you guys get what I'm trying to say). If the comment was romantic, then that means she's finally confident in herself when it comes to Naruto. I expect to eventually, if not next time she appears, see Hinata talking to Naruto on a equal level.
Yeah, Hinata didn't really change much in the series so far. I'm glad that she at least gained the backbone to confess to Naruto, though. Even though I'm usually neutral when it comes to her, I was proud to see that she didn't stutter during the confession. After the confession, I was surprised to see Hinata privately congratulating Naruto instead of being more forward. Maybe that's too much change to ask from Hinata at one time, but I digress. I didn't really see Hinata's confession as really bad timing, though, since she was about to die, so better now than never, right?
She's probably popular because many people see themselves as shy, she's endearing, she has a sympathetic background, and she's one of the few people to like Naruto from the start. Also Sakura was very hated in Part One, and Hinata was pretty much the complete opposite of Sakura, so their hate for Sakura turned into a love for Hinata.

I totally agree I don't hate the pairing itself though I just dislike the rabid shippers

I think it's the other way around. Their love for Hinata makes them hate Sakura

Sorry to go OT, but I have no problem with the term Konoha 11 or 12(if you include Sai). I understand why it is always used. It is not about being a supporting character. It is about the bond Naruto has with his friends and Sasuke being missing from that group. Every time Naruto thinks about his friends, the K11 are shown by Kishi in Naruto's mind. When Sasuke thinks about what he left behind or people who wronged him in his mind, they are shown. A character like Shikamaru or Lee is certainly more important than a Tenten, Kiba, Shino, Ino, or Hinata. And Naruto is more important than all of them. But they symbolize the same thing. They are Naruto's generation. The generation that was changed by him and are now changing things themselves.
And Sakura is part of that group as she heads toward Naruto.

It's unfortunate but first impressions even in a manga are so lasting it could lead to where we are now.

I think it's the other way around. Their love for Hinata makes them hate Sakura

I think it's both, however, I think the "loving Hinata because they hate Sakura" applied mostly in part one. However, in part two when she got better, I think the "hating Sakura because they love Hinata" mostly applies.
That's a problem, because you'll see Hinata fans and NaruHina fans quit buying the manga out of rage, which will result in less money for Kishimoto. There's a reason why Kishi is going to make a pairing canon at the end of the manga, ya know.
