Sakura seems like the time to keep her own surname. Idk, it just seems that she'd want to be recognized as someone who forged their own path of being a ninja without the help of a clan. Ik she isn't an Uzumaki by blood, but if people heard the name, they'd think she was, but by staying Sakura Haruno, she keeps an important self-reminder that she made it so far without the help of a clan name.
Besides, Kushina didn't become a Namikaze.

Maybe the surnames work differently when one spouse is from a clan. Like, if that's the case, their names aren't changed.

My knee-jerk reaction is to say she keeps her own, since I plan to keep my own in marriage, but... honestly, it's more likely that she will take Naruto's name, huh?
