When you compare Sakura to Kushina, you compare her attitude and thoughts she had of Minato and parallel them to what Sakura's attitude and thoughts are of Naruto. The comparison of Sakura and Kushina are their personalities and actions towards the one they love romantically.
When people compare Kushina to Hinata, they never relate their personalities or actions towards their romantic lover because they don't have anything in common. They have to compare Kushina's undying motherly love towards Naruto and Hinata's romantic love towards Naruto because Hinata's romantic love towards Naruto is nothing like Kushina's romantic love towards Minato.
That is why the NaruHina and MinaKushi parallel doesn't work. Their relationships are nothing at all compared to NaruSaku and MinaKushi. They have tried and failed to relate Hinata to Minato even, but that's WAY out of the water.
If that scene reminds them at all of MinaKushi, then it would be a NejiHina parallel. It still differs of course because Hinata was too far away to be pierced with Neji, but if she had, then it would have been a NejiHina / MinaKushi death parallel for sure. If some people want to make the argument that Hinata's love is in fact not romantic and is more of an.... extreme admiration/idol type of love, I guess that could be close to a motherly love? Eh....
