Also I'm sorry but didn't they see the "ending" or just chose to ignore that part? Because the character that has always been about never giving up no matter what ended up giving up on everything.

I almost read that wrong but yes, this is sadly true. I did love the joke about Salad asking about her love and said, "Who cares! We're canon!" While Bolt asked about his love and said, "Watch the movie, son."
